Simpled Braised Short Ribs

This one’s as old-school as it gets — minimal fuss, maximum comfort.
Ingredients
- (3-4 lbs) Short Ribs, Bone-In
- (2 tbsp) Olive Oil or Beef Tallow
- (1) Large Onion, Diced Large
- (8) Cloves of Garlic, Smashed
- (3) Medium Carrots, 1" Chunks
- (1 cup) Red Wine or Dark Beer
- (2 cups) Beef Bone Broth
- (1) Rosemary Sprig
- (3) Bay Leaves
- Salt & Black Pepper
Directions
- Preheat oven to 325°F.
- Pat ribs dry and season generously with salt and pepper.
- In a Dutch oven, heat oil and brown ribs on all sides. Remove and set aside.
- Add onions, carrots, and garlic, sauté a few minutes until softened.
- Deglaze the pan with wine or beer, scraping up all those good bits.
- Return ribs to the pot, add stock and herbs, cover, and slide into the oven.
- Braise for 3–4 hours, until the meat is tender and nearly falling off the bone
Serve over mashed potatoes, polenta, or a hunk of crusty bread.
